Eggs are expensive! Here are a few substitutions.

Here in Missouri, a dozen eggs are $3-$4. In my home of 6, eggs run out extremely fast. My kids are big fans of eggs for breakfast.

It’s unfortunate, considering many recipes include eggs. However, if you are baking, you can find cheaper substitutions and you won’t be able to tell the difference. One egg is believed to take up around a quarter of a cup.

  • Use 1/4 cup mashed banana for every egg you want to substitute. You may avoid chunks by using overripe bananas. Bananas are better used for cakes.
  • Applesauce, especially unsweetened varieties, can be used in place of eggs. To substitute 1 egg, use 1/4 cup. If you use sweetened, you may reduce the amount of sugar in your recipe.
  • You may also substitute 1 egg with a mixture of 1 teaspoon of baking soda and 1 tablespoon of vinegar. For baked goods like loaves and cakes, try this idea.

If you’re curious whether or not cake mix + zero sugar Sprite works, it does! Mix together, bake it per the box directions, let cool and top with your favorite frosting. Super easy cake! There are no eggs involved, and it’s delicious.

For whatever reason you’re not purchasing eggs, there are cheaper alternatives that work like a charm!

I lost my job, and started baking more

At the end of last year, I hit a snag…..I lost my job!

I’ve been so grateful for the last few months. I had multiple people reach out about job opportunities and groceries. I made the best with what I had been given…a bunch of baking ingredients. Pinterest and Tiktok were my best friends.

Did you know you could make a cake with just boxed cake mix and a can of Sprite Zero? It’s super duper good!! And I’m super weird, but I put the frosting on while the cake is warm. It melts all around it.

Things I’ve done since losing my job:
-applied for a ton of jobs
-baked some yummy bread
-allowed myself to break down a handful of times
-donated plasma
-set routines in place for myself and my kiddos
-asked for a lot of help
-humbled myself toward my sons and daughters
-baked a little more bread 🥖

I have a little more wait time for job opportunities, but with my support and my children, I can do anything.

Super Easy French Bread Pizza

My kids and I absolutely love making this pizza. It’s not only easy to make, it’s fast and cheap! It takes no time at all to prep. Dinner will be ready in a snap.

Here’s what all you need:

  • french bread loaf
  • pizza sauce
  • shredded mozzarella cheese
  • desired toppings (pepperoni, sausage, black olives, pineapple, etc.)

Preheat your oven to 425 degrees. Slice your French loaf in half, if it isn’t already. Cover the loaf with pizza sauce, mozzarella cheese and your favorite toppings. Cook in the oven for 15-20 minutes.

Trust me, it will be a huge hit with your family. My teenagers love making this for lunch during the weekends, when they need a quick, delicious pizza fix.

Nutty Chocolate Banana Bites

Do the kiddos need a treat? Make Nutty Chocolate Banana Bites!

What you need:
-Bananas
-Peanut Butter, Almond Butter or Nutella (We used dark chocolate peanut butter)
-Chocolate Chips

All you need to do is chop the bananas up bite-size. Spread the peanut butter onto the banana bites and sprinkle a few chocolate chips on each one.
